Our business is focussed on the cooking of ethnic food – including Italian, Polish, Mexican and Vietnamese cuisine – and the preparation of same on a large scale for multiple catered events on a weekly basis.
We require an individual that is willing to go the extra mile to make sure the guests’ expectations are met. The ideal candidate will receive any necessary on the job training with pay.
Job Description:
The Sous-chef will work with and assist the Executive Chef with all food preparation, including cooking and plating of food, development of specialty menus, and pastry development and preparation for various large scale events.
Supervise activities of 5 to 10 specialist chefs, cooks and other kitchen staff
Demonstrate new cooking techniques and new equipment to cooking staff
Prepare and cook complete meals or specialty foods, such as pastries, sauces, soups, salads, vegetables and meat, poultry and fish dishes, and create decorative food displays for special events such as banquets
Instruct cooks in preparation, cooking, garnishing and presentation of food
Create new recipes
May plan menus and requisition food and kitchen supplies
Previous work experience and knowledge of a commercial kitchen would be an asset.
The ability to develop the following skills will be expected of the successful candidate:
Skills Required:
A working knowledge of dining room, bar service, kitchen service and catering of events, both on and off site.
Ability to plan and execute customer events, on and off site.
The ability to prepare meals efficiently under time constraints in compliance with recipes and portion guidelines.
The ability to maintain records of food costs, consumption, sales and inventory, analyze operating costs and other data; and to order food and kitchen supplies.
The knowledge of and the ability to maintain food safety and sanitation standards.
The knowledge and understanding of how to train staff in preparation, cooking and handling of food, and the importance of preparing dishes for customers with food allergies or intolerances.
Past experience in, and the proven ability to successfully organize, staff and manage employees, both full and part-time.
Required Education:
A College, CEGEP or other non-university certificate or diploma from a program of 1 year to 2 years as a minimum is required – as completion of this level of education shows the ability and the desire to learn.
Diplomas with specialties in Culinary Management and the Hospitality Sector will be an asset.

The successful candidate must be available for morning or evening shifts, on weekends and weekdays – flexible hours.

Work Conditions and Physical Capabilities:
It will be a fast-paced environment, and you must have the ability to work under pressure and the ability to perform repetitive tasks, and to take initiative. All tasks must be performed with great attention to detail.
In addition, this role is physically demanding, requiring walking and standing for extended periods, bending, crouching and kneeling, and the ability to lift heavy loads up to 45 kg (100 lbs). Physical fitness is an asset.
Must be available to work evenings, weekends and holidays as required. Overtime may be required during peak seasons, including statutory holidays.
Security and Safety Bondable:
Criminal record check will be required as many of the catering events are in private homes.
Language Requirements:
The ability to communicate in English is a necessity, and the ability to communicate in Italian, Polish or Vietnamese would be beneficial as the leadership in the kitchen has a diverse background.
Language skills must be at a level where the successful candidate is able to speak, listen and write in a clear, thorough and timely manner.

Salary: $25.00 to 30.00 / Hour for 40 Hours / Week
The remuneration will start at $25/hour, and may be negotiable up to $30/hour, based on the qualifications of the selected candidate. He or she must be able to start as soon as possible.
